'I have never defined myself the owner of the estate, if anything its Keeper: it was the place that chose me, I just dusted off its hidden beauty. Our vineyards have been handed down to us directly by the Monks. History has it that the archbishop of Catania, who had made Pisano his residence, gave the Monks the land to cultivate and it was the Monks themselves and, in particular, those of the he order of the Augustinians barefoot from Valverde who, from the 17th century, began to take care of the land in Pisano then called Contrada Monaci in their honor: they shaped the steep hills through the terraces that have come down to our days. '
